We just talked about this in class and noted that one of the ways to shut down browning would be to remove/destroy/turn off the enzyme, polyphenoloxidase [PPO], that catalyzes the browning reaction.  These guys have done just that by turning off the gene that makes the enzyme.  Very cool…..
